View Full Version : Quick cook on the Assassin Pellet Grill

Wife bought 10 pounds of leg quarters yesterday so today I fired up the Assassin when I got home. From start up to finished product was just over an hour and forty- five minutes. Started out at 300 then when meat temp got to 160 turned up the pit to 350 to finish it off. Seasoned with Oakridge Secret Weapon.

Nice lite smoke flavor using Lumber Jack MHC.

Nice! Was 350 hot enough to get bite-thru or crispy skin?

It was bite through but not like I like. Next time I will crank the temp when the meat temp is 150 and see how that works.

I run 400 straight thru, skin is like a potato chip, dry brine in frig uncovered a while first
