Well, maybe just one experiment. Hadn't done faux burnt ends from a pork belly before, so this was the time to try that out. Conclusion: holy cow, must do that again! I can tell they're going to be a big hit at the next party. Probably would do them with a sugar free rub, as these charred up a bit just when things started getting interesting. Used Meathead's Memphis dust, but would likely go with Sugarless Texas Sprinkle next time. Chicken wasn't anything super exciting, just SPG. All in all, good eats!

Man, doing them out of pork belly was the best idea I've ever seen. It's like BBQ'ed cracklin'. :shocked:
