Hey guys! This is my first post. Iíve been lurking here for a while reading threads and gathering knowledge. Iíve been a BBQ lover for a very long time. Iíve dabbled in cooking BBQ over the years with my WSM and very much enjoy it. Just moved to Northern NY and itís severely lacking in BBQ or any good food if you want to be honest so I decided to get serious about BBQ. We have so much maple 🍁 up here so that will likely be my wood of choice. We also have a lot of apple 🍎 orchards so I want to use some apple when I can get it. Iím going to set up a charcoal cooker and make my own lump. I pay $285 for a cord of maple to heat my house so stealing some from the wood pile to make lump will be cheap.

I ordered a Kamado Joe which just arrived today! It fits my need to do a variety of different cooking styles. Bought a packer brisket at Sams and Iím going to smoke it on Sunday. :clap2:

P.S. Never met another Jew that BBQís so Iím here to represent! :biggrin1: No I love pork to much to be kosher! :tsk:

They do a kosher bbq competition here in a suburb of KC every year, so you aren't the only one :thumb: welcome aboard.

Are we talking upstate new york as in Westchester or upstate NY as in Watertown? (: I am from the finger lakes area (town too small for anyone to know but think Auburn/Ithaca/Cortland area.

Thanks for the welcome! I’ll check out Adams page on instagram! I’m in the Adirondack high peak area in the park. I’m familiar with Ithaca. I have some family there. If you want the most amazing porterhouse I suggest checking out the John Thomas Steak House in Ithaca. Best steak I’ve ever eaten!

I've never used maple but apple wood is right there with hickory as my favorite.

I think some Pork Belly burnt ends should be next on your list.

Smoke them, deep fry them, toss them in some sauce, and bake them till they are meat candy. Thank me later.

Be careful as it starts with only one smoker around here and then you end up like me with a small 'herd' of them.

This recipe looks good! You’ve got to be pretty harcdcore to eat these without feeling like it’s very very wrong! It’s like the 8 ball of of bbq with all that fat, sugar and sodium! :biggrin1:

Welcome BBQJew. I'm off of Mariaville Lake in NY. I spend a lot of time in the adirondacks and went to college in Plattsburgh. Our hunting and fishing camp is in Speculator, NY and I fish a few bass tournaments on various lakes up there. Your in Gods country Baby!!

That's such a beautiful area! I go to a camp ground between Tupper and Saranac Lake every summer. I look forward to it every year. This year the guy who owns a little convenience store near the camp grounds got a smoker and make some REALLY good pulled pork. He had brisket too but I didn't get a chance to try it. The guy from Tail O' The Pup has a pretty nice smoker set up as well. I talked to him for a while this year.

Shalom! Hereís what came yesterday! BIG JOE! :grin: Setup is a pain in the tuchas! I had to schlep it about 200 yards from the garage to the back of the house and this isnít a feather! Itís big, bulky and heavy! Paneled firebox is also not kewl to setup! Got the panels lined up to an acceptable level after multiple tries and lots of kvetching! Oy Vey! First cook tomorrow! Few racks of baby rack ribs! Líchiam!
