Got a pork loin out for dinner tonight. Normally I just slice it up season a d do pork chops. Just looking for some new ideas. How do you do pork loin?

As a minimum for almost all pork loins I cook I lightly season and inject with a few ounces of a lite brine, and give them at least 4 hours of dwell time in the fridge. Then touch up the seasoning, and grill, smoke, or roast.

My Lite Injectable Brine is: 1 gram of salt (canning is preferred as it dissolves really easily) to 1 ounce of water or juice. The juice can be apple or apple/white grape. I keep the small 8 ounce bottles on hand so I add 8 grams of canning salt, shake and I'm ready to go.

This injection is only slightly salty, but you can reduce the salt, OR just go with straight juice.

Season with yardbird, wrap with bacon, pull at 140*, leftovers sliced thin cold is fantastic sandwich meat

cut in 5 to 6 " long 1" strips -
marinate overnight in Sweet soy sauce (ketjap manis), lemon juice, crushed ginger and garlic and some Sambal or Sriracha sauce.
string on metal skewers and do a quick hot BBQ..
Serve with fried rice, peanut sauce and a beer..

^^^Above ideas all great.Depends what you are in the mood for.There are MANY options for loin.I like it any way I can get it.Another option is slice into 1/2 inch steaks,pound it kinda flat,dredge it in flour and make pork cutlette.On a sammich or on it's own with a little gravy is pretty good eats.I think some folks call it snitzel.
