Starting with the fat side down, I flip at 2 hours, again 4 hours later and again until they are done.

I never flipped mine. Usually put them on and go to work. Thirdeye, did you notice a big difference?

I can't say, I have never done one without flipping. Here is how mine look during the cook and when done.
