How my wife and I know we are rich?
A good friend of ours raised a few pigs a few years back and they were delicious. She just raised a few more, and we just reaped the benefits! She’s raising Russian Black pigs (?) I guess, a slower growing version with some incredible darker/redder meat. They only got to a couple hundred pounds, and we were lucky enough to score one and half of them before they were all gone. It is amazing how good fresh pork is compared to store bought!
Went to take a picture of the freezer, and the garage light went out, so you’ll have to wait to see the bounty of meats some other day 😊
This weekend, the Wife had a craving for beans, and we had the cutest little trotters/hocks to try.

Now I know that hocks are usually cured, but we thought what the heck, let’s keep it simple and try smoking them. A rinse, a little EVOO, a little Penzeys Cajun spice, a little Butcher’s twine for insurance, and on to the PBC.

Figured they wouldn’t take too long, so started prepping my favorite veggies, mixed greens. Look how beautiful those look!

Slow cooked the greens last night so we could just put them back on today.

Pulled the trotters and into the refrigerator for making the red beans today. They came out looking and smelling great.

So today, the greens were back on the slow cooker, and I prepared the tiniest Boston Butt I’ve ever seen. This thing was only like 4 pounds, but I love the color of the pork. And since there’s only the two of us, that should be the perfect amount of meat to go with these beans and greens.

Once again, little EVOO, Penzeys Cajun, some insurance twine, and onto the PBC with this little guy. Greens are in the slow cooker just smelling great and getting better all the time. The Wife’s working her magic on the red bean broth, which is smelling terrific. Beans should go in soon, and that little butt probably has another two or three hours to go.
Sitting on our back deck on a nice, breezy 69 F° Alaska day. Enjoying the smells from the kitchen and the cooker. Today is a good day.
