View Full Version : 5 Year Butts. Plus 1. Semi live. (pics)

So, the butts are not 5 years old. But my daughter is. And my son is 1. They had birthdays this week and tomorrow we will be having roughly 70 folks over to the house to celebrate.

For the party I will be cooking 8 butts, 10 lbs of chicken, no idea what the chicken will be. It's coming up the mountain with someone else. But whatever it is I'll cook it.

Sides of cornbread, tater salad and bbq beans.

On Sunday we will be serving a smaller group a late night beef snack of 3 prime briskets. So rather than shutting things down and starting right back up again I'll just roll one cook into the next.

I'm going to do my best to keep updates coming every couple of hours after 2200 pacific time.

Made another mod to it today. Gotta like 'ol #1 vs. 17 by now. HAHA. Don't know why I always feel compelled to mod her. But I do know why I keep her. She cooks like nothing else have ever used.

Getting the fixins ready for the bbq beans. Don't really want to have to do that tomorrow while things are busy. I'll get all the veggies chopped. Now off to trim and rub some meat.

So there was what we would call a bit of confusion at the store the other day while purchasing a case of pork. That forced me to go to another location to buy my meat. I usually have IBP, but Farmer John was all this store carried. So I'm giving it a try. So far there is a lot less trimming needed but the butchering on the boneless is far worse than IBP. And the cryo vac smell is different. not worse, just not what I'm used too.

Update:

Hour six, and the butts are wrapped. Also, decided to throw one of the three briskets on early. This brisket is a S.P.O.G seasoned one, and has been in the cooker 2hrs now.

Well so that didn't go as planned. So shortly after my last post a couple of guests arrived hours early and they were not even on the invite list. But they are old friends so what ya gonna do right? And bey that evening we had lost our internet for about a day. We were expecting 74 the numbers bumped up to 95, So I threw on a bag of chicken quarters as well. Also I could not find my butcher paper so I resorted to foil for the brisket. So sorry for not keeping the post up to date. Didn't get all the pics I wanted, but here are the rest of them. Nothing plated, no tater salad shot, no cornbread shot and no chicken shot. I was pretty busy running the line. Oh well.

There were a lot of unexpected things on Saturday, but all in all it turned out great and everyone had a good time. We ended up with about 25lbs of pulled pork leftover. A problem I like to have.
