Between 250 and 300 for 13 freaking hours

Started 250. Realized wasn't gonna work bumped to 300. Stalled forever

The stall requires steely patience. I build in time for that on my butt cooks. I like to hold butts an hour or two in FTC after I pull them from the cooker before I pull them apart.

I would have liked to let it rest but got too late for kids. Pulled fine but next time I'm gonna just have to do a overnight cook. It takes 15 hours to get a dadgum butt ready that's enough to feed us all

No shame on the cook you did..............it's on time and looks great.

TIME is what you have to work with.

I like to cook 275, and I plan on 9 hours in the cooker for a 10 pound butt give or take an hour. When it probes tender all around and the bone has some wiggle, I pull it off to FTC for an hour or more to even out the cook.

Yeah....time and patience are the game with butts.
