You have my interest. This has to be one of the most intriguing things i have seen in a long time. If that even gets close, there is much less waste, and you don't hae to do a whole primal to get a good dry aged steak. Googling Koji rice now.

IIRC it's rice with a special mold on it. while it will alter the steak it's not nearly the same as dry aging.

I have used koji to fast age a steak.

It definitely does something. After 48 hours, my testing yielded a very noticeable change in flavor and some change in texture. That said, it was not at all like a fully dry aged steak. FWIW, I tested the steaks using a sous vide cook and a super hot sear 1/2” off the coals in a kamado. Standard grilling or reverse sear grilled may yield different results.

Interesting. Wouldn't have occurred to me. My wife and I used to make miso with koji (and I'm pretty sure a few other things).

Low cost of entry, for sure.

But it doesn't appear to come out like this in terms of color (37 days):
