When it comes to smoking/grilling, where's your weak spot?


For me, it's my knife skills. I get the job done, but most of the time my brisket looks like it should have crime scene tape around it.

Figuring out pork ribs.

I've been experimenting for about a year now looking for that magical, repeatable method.

One day, I'll see the light. :-D

It's what keeps me going.

TBS or TWS, or whatever. Logs, chunks, twigs, branches, chips! UDS, PBC, WSM, stick burner, pellets, :shock:

A decent and sharp knife will help. Always go slow. Trim the fat and meat, not your fingertips. Trim away from your body. Don't ask how I know. Lots of good vids out there that show basic knife skills that many of us could learn.

Last weakness is Cindy Crawford. Always has been! Still is. Oh yeah, and beer. Just cold beer. I ain't picky.

Lately it's been pork butts...have not been getting the rendered-ness I'd like out of the half with the bone in it...dunno why. The other half with the money muscle has been good. For a while there I was turning out butts that would almost melt in your hands when you went to pull them.

My weakness? Checking this site 30 times a day and finding a new smoker, griddle, thermo, sous vide, scale, instant pot that I need to buy.

Sides.

I am really good at making a meat entree and having absolutely nothing to go with it. I either need support from my wife to fill in, or a push to get my lazy ass to cook more than just the meat entree.

I started scoring the ribs after seeing JasonTQ’s post on his rib fest. I don’t miss membrane removal at all. My ribs are still tender and I’m not spoon feeding judges.

Well these days I'm pretty much sliced bread :biggrin:

It use to be chicken. It would be burned. Raw.......Burned and raw. I could screw it up in a smoker or on a grill. Over smoked, undercooked and slimy skin.....would you like sauce?

Brisket.

Can’t get it right. Too dang expensive around here to keep screwing up.

I’m pretty solid on ribs, pork butts, chicken for a backyard guy.

Brisket is my nemesis. For now.....

Absolutely brother, my old boss used to say "when you hire a chef hire a dishwasher" until I arrived and he changed it to "when you hire Wihint hire 2 dishwashers and a utility employee to gather the pots and pans etc..." Thank you for the great memory!

I love to smoke but prefer the taste of grilled. That’s a problem (weakness) on a lot of levels. Beer consumed, songs played, beer- Yea I said that already.
Anyway that is my weakness. The thrill of the grill. I’ve started smoking the smallest ribs, shoulders brisket etc that look good in the bin.

Kind of weird but right now I find the s-m size pork cuts taste better than large. The opposite with beef.

And Scotch- that’s why I seldom buy it.

Grilling. The only thing i grill is steaks. Well burgers but that don't count. Just never really wanted to grill. I'm getting there slowly.

Ditto. Trying to coordinate more than one side with the entree is too complex for me.

Ribs are my worst. If dinner is scheduled at 1830, they'll be either ready at 1720 or 1930 (these I'll wish were cooked a li'l longer). Probably need to cook ribs more often.

I like briskets and butts. Always factor in plenty of rest time for them. Keep multiple packages of chopped brisket and/or pulled pork vac packed in the freezer if a last minute request for que is needed.

Timing has always been one I’ve struggled with but lately I’m starting to figure it out. I still finish a few things early or late but most the time I’m hitting the mark sometimes with 2 different meats.

My current weakness is sides. My wife is an excellent cook so together we make a good team but by myself it’s usually meat and beans, sometimes slaw.

Grilling is a weakness of mine as well. My ability to misjudge steak is legendary, even with all the gadgets, temperature probes and other miscellaneous crutches at my disposal.


"How do you like your steak?"
"Medium."
"This steak is well-done!"
"But it's medium sized..."

Beasts from air and water... don’t like them as much so don’t practice them enough... just when asked to do so... generally very happy with my land-flesh cooks grilled or smoked; I’m way more invested.

And coffee. I drink inordinate volumes of black coffee... strengths and weaknesses are often the sides of the same coin... ;)

I think timing and sides are mine. I'm really good at getting all excited about cooking a giant protein, then when it's ready going "oh crap, we don't have anything else to go with it" And, I misjudge the time on anything. Luckily she works in the yard till an hour past dark, so that generally gives me plenty of wiggle room, but we eat a lot of dinner after 9PM.

(1) The fact that I am getting/got older and am not as good physically as I once was.

(2) I set too high of expectations for my cooks. Family and guest are always happier/satisfied than I am how things turn out, I am my own worst critic and sometimes it takes the fun out of it.

Same here my knife skills suck I butcher my ribs when I cook em.
