I love regular seafood or mixed paella but wanted to make something different. I ran across some nice looking crawdads and decided to make this.

Gathered some andouille, tasso, chaurice and boudin..

celery, onions, scallions, garlic, peppers, tomatoes, saffron, lemons, parsley..

made a shrimp stock...

started with duck fat...

added tomatoes, shrimp stock, saffron and cajun seasonings, and let it simmer...

Covered the grill and let er go til done.
Added lemon slices, parsley and scallions and called er good.

I really liked this one. The tasso, andouille, chaurice and boudin flavored the rice really well. I'll be making this again in the future.
I sent most of it home with company but had leftovers the next couple of days.

Man Jeanie...you always hit it out of the park. Jealous you have access to all that great sausage, love the Cajun spin on the paella. Colors and photography look great.

Thank you Sportster! I really liked the way this one came out. The sausages and boudin added so much flavor. I'll be making it again. It takes time to prep but it's worth it.

Looks absolutely amazing. Shrimp and crawdads like that get pretty small when they swim this far upstream.

For once I decided not to look at your delicious food prep but instead to focus on your photography skills and product placement and plating skills. I think you do all of this just as well as you cook.

that will work. I have made Jambalaya in my paella pan (with bomba rice) and it was really good.

That looks amazing. I've found that smoking the chicken first is a crowd pleaser when I make paella. (I'm making it next weekend to celebrate my wife's birthday.)
It just adds another layer of flavor to the dish.

Thank you Zippy! I do make my own sausages. Didn't have near enough time for this cook and didn't have any made ahead of time. Homemade andouille and boudin are hard to beat! :thumb:

Your paella sounds delicious! I think adding smoked meats is a great idea. I didn't season the cubed chicken at all before adding, it absorbed the flavors of the smoked sausage, tasso and andouille. I was happy with the outcome. Thanks so much for the kind comment! Early Happy Birthday to your Mrs.!

That is the most ridiculous looking paella I have ever seen, and I want some! I was hooked, as soon as I seen, that Poche's label. If you haven't tried it, I think they make the best boudin and andouille, that I have found. The only commercial brand, that grinds their andouille properly. I see an order from the Cajun Grocer in my near future.

I am huge paella fan so can appreciate the amount of work involved. I usually cook it on gas paella burner. You have have any issues controlling the heat with charcoal? Did the paella pick up any smoke flavor?

Thank you Willy! The prep does take awhile, doesn't it. lol This cooker has a hot coal rack that can be raised or lowered. I just raised it when needed. It worked out really well. I haven't had the cooker long, but really like it so far.
Yes it did pick up a bit of smoke flavor.

Thank you Ofer! Southern U.S. foods are what I grew up eating. I just used some of the ingredients in most southern rice dishes and made it paella style. I think the addition of saffron wasn't really necessary. The smoked sausages, boudin, tasso and chaurice added enough flavor. I'll be making it again in the future.

I love Cajun food and paella, so that has to have been an incredible meal! Looks like a lot of work that pays off very nicely. Wish I coulda had me some of that! You have some very fortunate friends!
