Hi all,
Iíve been asked to cater a buddyís wedding in a month (mostly because of the awesome skills Iíve picked up here on the Brethren site!).
Having never cooked for so many at one go Iím hoping for some sage advice from those who have.
There are 70 guests, an 18í baron of beef roast, I proposed Costco chicken thighs( bone in skin on) marinated in Italian dressing, and a couple of salmon. (We are on the west coast of the great white north after all!)

Was wondering how much beef/ chicken per person I should budget for.
Iíve been given a big gasser to use. I have a UDS I could bring up( itís out of town) if it were necessary.
Any input would be really appreciated.

Rocky. I will point you in the right direction ,having catered many many weddings.
Depending on the amount of side dishes, allow 4 -5 ozs per person of each cooked meat.
