with Brazilian cheese rolls, sausage, mini peppers, pineapple and a small salad.

Marinated the flank steak in chimichurri for 3 hours.
Started the gasser and got it to 400* for the cheese rolls.
Made an orange and red onion salad.
Got a fire going in the XL with RO hardwood briquettes and several small chunks of red oak.

Grilled the flank steak for 3 minutes per side.

The cheese rolls are done.

While the meat was resting, grilled the sausages, peppers and pineapple.

fwiw - bought a bag of this at Lowes for $5.99 several days ago and have 3 cooks with it. That's what I used this time.

I'm giving it an OK. Takes a while to light with a Weber stater cube & is much faster using gas assist. Once the white smoke goes away, burns clean and smells good. Doesn't get that hot. So, if you are interested in a high heat sear... Anyway, I'm thinking it would be best used for low and slow. YMMV.
