View Full Version : Pork Belly Cook Time

Trying Pork Belly for the 2nd time and was looking for guidance on how approximate time the cook will take.

The pork belly is skin off and a little under 7 lbs. I plan on cooking it at 225 and will wrap in foil some time around the 4 hour mark and will cook to IT of 200. Any guesses on how longs this would take to cook?

i've had these take all sorts of times depending on thickness (my guess); i usually plan for 6-8. i find it hard to go by finish temp (as it's hard to know if you are probing fat or flesh) so i aim for when the fat seems well rendered/ almost squishable, if that makes sense.

I usually one inch cube my pork belly and cook it on an open rack at about 275F for about four hours. Remove it, sauce it up and cook it for about another hour at the same temperature.

Fat is well rendered and sauce caramelized.
