Hey guys so I am about to upgrade and build a much bigger smoker, and just wanted to get some input on the design. I have heard great things about reverse flows, but I would rather have a vertical offset because of the large amounts of meat you can do with such a small footprint. I have done some research and I would like to do one similar to the Stockton made by yoder smokers, here's the link: https://yodersmokers.com/stockton.html, I attached a picture of it. I am worried though that I will not be able to control the temperature from top to bottom. Does anyone have any experience with a similar design to this one?
