View Full Version : Looking for Pepperoni Snack Stick/Beef Stick Recipes and Methods

I love pepperoni snack sticks and beef-n-cheddar sticks from my local meat market. But I'm tired of paying $10/lb for them. What are your best recipes and methods? Here's the equipment I've got at my disposal:

-KitchenAid Professional stand mixer with meat grinder attachment
-WSM 22.5"
-LSG 20x42 offset

Can I make pepperoni sticks with this setup? I'm not interested in buying a dehydrator.

I doesn't involve stuffing, and even though they are small, they are not the small diameter you are probably looking for. But... it's a good recipe, you can tweak it to your liking, and best of all it's really easy.

I have some recipes, but if you have to send for collagen casing you might want to try a pre-mix assorment for your first time. It will save you from getting extra spices, give you a wide variety, and assortment.

I dry them in my smoker at very low heat.
