Caught some Red Snapper at the local market, going to cook “Jamaican Style”
1st step is some fresh lime juice

The fish after seasoning for a couple hours and into the 18”

Also did some split breasts brined with some “Tony Cachere’s” for 8 hours for some sort of meals during the week

When I lived in Louisiana we had red snapper a lot. Loved it. There was a restaurant in Alexandria called Plantation Manor. Grilled or blackened snapper with lemon butter and dirty rice. Hush puppies and a creamy garlicky asparagus soup. Damn.

You brought back some memories.
