View Full Version : Beef Short Ribs Just Went on the Smoker

My first time cooking these. Wish we could get the dino ribs here in Charleston but these are about the best I can find. They look great. About a half pound each.

I cook those more often than the plate ribs, because I pick them up marked down at Krogers. They'll be fine, just more bark formation and they might cook a little faster.

I wish I could find plate ribs here - these are from Publix. I wonder if Publix could order them - they have a nice butcher department.

I'm not planning to wrap these at all. Should I?

Most stores cut short ribs from the whole plate, they get the plate ribs 4 to a cryovac so ask the butcher and he should be able to help.

I have a rack going today too, these are so addictive!!! I haven't decided if I'll wrap today or not, depends on how the cook is going when I check them.

Never wrapped or wish I did. As Rob said they probably have them in the back. I usually get my short ribs from Safeway, when I see cut shorties in the case I ask the butcher and he usually has the two plate cryovac pack in the back, last time it was a four pack.

I helped a guy yesterday that threw down back ribs in frustration. I told him they keep the 4 bone beef chuck ribs in the back. They cut them up for different things. He was very happy.

Going to probe them on the next check...though they have a ways to go I think. This Pitmaker cooks quicker than many smokers.

Go to Sam's in N. Charleston. Ask the butcher for the full plates they cut the flanken ribs from. They'll hook you up. Not cheap but what is in Charleston these days.?.? I think I paid $6.99 lb. a couple of months ago.

Talk to the butcher, they're getting full plates cryovaced and cutting them into singles, they can sell them attached.
