I've had a few Fattys here and there, but never made my own, until today. The amazing aspect of BBQ, is i learn something new every time regarding techniques, rubs cook times, etc. I love to experiment. Today was a first time Fatty, then some Baby Back Ribs, and chicken thighs. I thoroughly enjoyed my day. Thanks Brethren for your feedback and time. :thumb:

Next fatty, spin it in plastic wrap before you wrap it in bacon - it gets tighter and seals the ends. Wrap the bacon and spin it again...

Next fatty, spin it in plastic wrap before you wrap it in bacon - it gets tighter and seals the ends. Wrap the bacon and spin it again...

Does that help it to hold it's shape better? I made 2 today, and by time they came out of the smoker they had flattened out and looked like meatloafs.

I would say you're a brilliant student & should start tutoring. All I had to do was see the first picture to know...you used sausage, and that was enough for me...

Trolling the Facebook barbecue forums most folks have no idea what a fatty is. The vast majority use ground beef instead of sausage...yet still call it a fatty...it's a meatloaf...but they don't get it.

I know, I screwed up last weekend...
it wasn't a true fatty, it was a meatloaf... it was still damn tasty and made an awesome lunch the next day... :wacko:

I'll have to give it a try. Thanks for the tip. I did notice my wax paper was tearing during my rolling.

There was only one thing wrong with that fatty... Not enough to go around!! I would say you graduated with honors. Now, go forth and teach this newly obtained knowledge to the little people so that they may enjoy these delectable treats.

All that looks great, but I'm going to say this before Ron_L does. What you have there is not a Fatty. A Fatty is a breakfast sausage roll that has been covered in a rub and smoked until done. What you have is a Bacon Wrapped, Stuffed Fatty. Some may not like that you've called it a regular Fatty, so be careful out there. :-P

I'm sure Ron_L can direct you to the correct post here at the Brethren site about what defines a Fatty. If not, here it is (http://www.bbq-brethren.com/forum/showthread.php?t=140058). :grin:

Quick note : the sausage i used was a mix between fresh pork sausage from the farm and Italian sausage. Hopefully we hear From Ron L.
