View Full Version : Asian Sticky Wing Perfection!!

I've been on a kick lately using Asian sticky sauce instead of the traditional bbq sauce on ribs. Today I decided to try the sauce on some chicken wings. I marinated the wings for several hours in a mixture of evoo, ginger, garlic, tamari and soy sauce:

Rinsed and dried the wings and then coated them with some macadamia nut oil and Dirty Dalmation Bark Builder:

Onto the UDS with some hickory. Ran the drum at 300*:

Once the wings were probe tender, I dropped them into the fryer to get the skin super crisp. Here's the kids in the pool:

This was my first time frying wings post smoke. I have to say I really liked the texture and taste that it added to the wings:

Whipped up a batch of sauce using soy sauce, tamari, garlic, ginger, ketchup, hoisin sauce, brown sugar, lemon juice and siracha. Simmered to let the flavors come together. Added some corn starch and let it thicken. Tossed it with the wings and topped with toasted sesame seeds:

These were some of the best wings I've ever had. Will definitely do the smoke then fry thing again. The sauce is a great combination of sweet, salty and spicy.

Sure here is the recipe:

1 Tbsp hoisin
1/4 cup soy sauce
1/4 cup tamari sauce
1/2 cup brown sugar
1/2 cup ketchup
1/4 cup lemon juice
3 Tbsp honey
1 Tbsp ginger
1Tbsp garlic
siracha to taste (i use about 1 Tbsp)

combine and simmer for about 10-15 minutes. thicken with some corn starch and let cool to room temperature

enjoy!

Looks great! I did my first smoke then fry wings the other weekend and they turned out great. Will try that sauce! Thanks for sharing.

I tried the smoke then fry method but it leached all the smoke flavor/smell into the oil. I had to toss the oil because it stank the house every time i tried to fry other foods.

Sorry, I don't really have any measurements for the marinade. Was just kind of throwing things together....

Its worth looking into buying a cheap deep fryer just for the purpose of frying smoked foods, and store it in the garage.
