I decided to try 3 new things with my next brisket cook. I am trying a new rub, charcoal and injection. I typically don't inject, but wanted to give it a try. The new rub is smokin guns hot, the new charcoal is hasty bake lump and the injection is big poppa smokers cattle prod. I kind of wanted to do a start to finish on what my brisket process is, so here is the start. I usually trim and season the night before and I trim off anything that I wouldn't want to eat after it is done. I injected then seasoned. I start with olive oil and then Lowry seasoned salt, then black pepper and then the rub. I season both sides the same. I then sprinkle the meat side with a little sugar in the raw. Off to the fridge to rest over night. I will be cooking it on my Weber summit tomorrow morning. That brisket looks excellent to begin with. I've injected an ungraded brisket and it made a difference.

Have you used the Watkins black pepper before? If so how do you like it? I've heard rave reviews.

I like your trim job.....I dont always inject my briskets, but when I do I'm happy with the results.

Brave man. And this is from a guy who does questionable slathers on briskets! I've only ever did an overnight seasoning on a rack of ribs and hated the outcome. The rub got lost in the meat and did not create the bark that I was accustomed to.

Also only injected Select grade because it need all the help it can get.

Just got the fire started. Waiting for the pit to come to temp now. I made a charcoal ring for the summit a while back. It uses so little charcoal, I thought it would help keep smaller loads of charcoal more compact. I like the price on that prime brisket. It looks good too! We use Smoking Guns Hot. It's good. I am curious about the additional seasonings you used. Following

4 hours in, time to wrap. Nice color. I dissolved 1 beef bouillon cube in a cup of water and pour it into the bottom of the wrap. I double wrap in foil and then cook until tender. The Weber has been running kind of hotter than the 275 that I usually cook at, so I am interested to see how much longer it will take to get tender. Brisket is done and resting in a cooler. I vented it for a few minutes to let the steam off and then put it in a the cooler with a couple of towels in it. I plan on resting it until around 5 or 6. I had a decent amount of charcoal left after the cook was finished. Fairly pleased with the charcoal. I am curious to see how it tastes. More to come with slicing. Brisket was done right at 2 pm. Ok here is the money shots. 1st impression of the injection was that I couldn't taste a big difference in the brisket. It was very moist and tender. Not sure if it was all from the injection or my awesomeness. The charcoal had no off flavor or anything like that. I couldn't taste a difference between it and the Weber briquettes. The rub was good, but I got a lot of pepper taste. It was very strong. Probably could have not added the extra pepper to start with and that could have helped some. Everyone that ate it commented on the black pepper taste. Overall, it was a very good brisket. Now I want to try it again without the extra pepper.
