View Full Version : Brisket Flat Only, Cook Time?

I've only done whole briskets, but lately they've gotten so expensive, that I haven't done one in a while. I've been seeing some brisket flats at my local store and was wondering if the flat alone, would take the same amount of time that a whole brisket would take? Cost of the flat is much cheaper than the whole.

I recently cooked a flat in my Pit Barrel Jr that took 7 hrs with the smoker running around 275 degrees.

Here in Pittsburgh the flat is always more the the whole brisket. Just the same I would cook until probe tender.

I usually do overnighters with a whole brisket. They can go 12 to 14 hours at around 240. I go to IT of 203, then off to rest. Should I expect about the same with the flat?

I cook till 195 degrees and start checking for probe tender till done .

Flats are very expensive in my area ($5-6/lb). I cook flats the same way as a whole brisket, 230F for about 12 hours (usually overnight) until probe tender.

Should be about 1.25-1.5 hours per pound at 225.
