Whatís a St Louis Cheesesteak? Well St Louis has its own cheese. Provel is a processed version of provelone, which has properties closer to American in the way it melts. St Louis style pizza is famous for using it instead of mozzarella.

Imoís is the most famous pizza place and they sell the cheese in rope or slice form. So here you have it.

Man, I read it as Cheesecake. Looks good though! I've only done one burn in on my Tejas cooking plate. I may have done it wrong since I can flake off the burnt oil.

Kids got me that for Fatherís Day a couple years ago. Think it was from a craft fair. Even has a bottle opener. Never had much of a use, but perfect for this.

What cut of beef did you use, and what seasoning?

Ribeye, thin sliced (well as thin as I could get with a knife). Seasoning was Lawryís Seasoned Salt.

Next time I would try a strip steak. Iíve also heard Eye of Round is good to use.

I've never thought of using Provel for cheesesteaks, but it makes perfect sense! I'll add Provel to my shopping list.:thumb:

A note on Provel:

How long will it take me to "get it"?

It's been a year and I've had it on/in various dishes, but I'm not on board yet.

I'll keep trying for at least 3 more years as my kid will still be in school.

When I go try your Italian spots over in The Hill neighborhood, will they go traditional or use provel in dishes?

It must be a Chicago thing...you guys are just slow to catch on...look how long people in Chi-town have been Cubs fans.

The places on The Hill do use provel quite a bit, but will also use other cheeses depending on the dish.

If that pricing info at Dick's is good at the Jackson store, you should be on your way by now!

Grew up in St. Louis and miss Imo's (as well as some good toasted ravioli)! About two years ago took the family up there and caught a Cards game, Imo's and some Ted Drewes before heading to the Smoky Mountains to camp. All loved it and would have taken some Provel back but didn't think it would last in the ice chest after a week of camping! May need to find a place to ship to Texas!

Imo's ships the cheese! A buddy from Baltimore flew in to St. Louis so we could catch a comedy show a few years ago, he loved the Imos we had (and it wasn't even the best I have had from them) and we quickly researched how to get him Provel in Baltimore.
