At least in Texas, you have access to fresh more easily than some.

I really like tuna fish both fresh and canned. I pressure can my own trout and salmon which has a similar consistency as canned tuna, and ironically each jar gets a jalapeno slice top and bottom (or some green onion) for a back-flavor.

Years ago I was introduced to a Mexican appetizer that is jalapeno halves stuffed with tuna salad. You can use the pickled jalapeno's or fresh ones, or blanched fresh ones. Here is a LINK (http://inthekitchenwithbruce.com/jalapenos-tuna/)to a similar recipe. Sometimes I'll add some minced onion or cilantro to the tuna. The tuna in oil will buffer the heat of the jalapenos a little, and if you use tuna in water adding a little cream cheese is a good fit.

I make something I call "Tuna Surprise". The "Surprise" is, there's no tuna in it. :laugh:

I add tuna packed in olive oil to my marinara sauce occasionally to change things up. Tuna in Mac and Cheese has been a go to in my house as long as I can remember especially with green chili. I use a lot of canned mackerel, smoked herring and smoked sardines in dishes, taste good and supposedly healthy. When I was in college I used to take a 20 ounce can of mackerel and 2 cups of homemade salsa and put it in a blender to make a protein shake, it looked sick but was delicious.
