I have found that my UDS is smoke seasoned. So I can burn KBB and the walls will give off a smoke flavor.
That said I did St Louis Ribs with Voo Doo Dust and Pork and Pecker Sauce.
This was a 3.5 hr cook and at 1 Hr I put s diffuser plate in to stop direct heat.
