View Full Version : UDS Working Overtime/Pork pics

I fired up the UDS Friday evening to do a couple 9+lbs picnics, using Lazarri Mesquite and a few chunks of hickory for smoke. It was too dark for pics but I went to bed around 2AM and the drum had been humming along at @235* for a few hours and when I got up after 8AM it was at 200* I gave the basket a shakin' and it was back up to 225*. I usually use foil but this time I just let them smoke and pulled them at @197* internal. I had cut slits in the skin and the smoke really got into them. I like cooking picnics, the meat tastes sweeter than butts to me. They turned out pretty good!



After I pulled the picnics, I planned to do 3 racks of babybacks, but after this long cook there was still burning lump but not enough to do the ribs. So I dumped a Weber chimney (@6lbs ) of unlit briquettes on top ot the coals and a couple chunks of apple wood for smoke and in about 20 minutes the thermometer was pegged at 500* (I left the lid off, big no-no) but I got the temps down to @250 and slapped the ribs on. Mustard slather and Dr.BBQ sweet rub on 2 and K salt and Black pepper on the other.



I put 4 Fatties on after the ribs were devoured, and had to go to work just after they came off and didn't snap any pics, but the drum really got a workout - over 26 hours on 14 lbs of coals. Not too bad!

Very fine looking eats! Do you think you get a different taste with the UDS (I assume with no water pan other deflector between fire and meat) and a more traditional smoker (say WSM or offset)?

Did you turn the ribs at all?

I did turn the ribs about every 45 minutes and sprayed with apple juice.

I love those drum ribs swamp! They are hard to beat. Looks good.
