Those look great. I like to marinade mine in lime juice, salt and tequila overnight before cooking. Kind of like giving your steak a margarita hangover.

Flat irons are good. The JD flat irons at TGI Friday's are wonderful.

Dinner looks good ...

I had a flat iron steak a few months back at a southern comfort food restaurant on Long Island ( LL Dent)... One of the better steaks, I've eaten in quite a while... Not a typical cut seen in the local supermarket around here...

The beef cut is actually a top blade steak derived from the tender top blade roast. The roast is separated into two pieces by cutting horizontally through the center to remove the heavy connective tissue
