First attempt at some beef plate short ribs today

First post, been lurking for a few weeks now and wanted to try something different today since we finally had some great weather. Threw a 5.5# plate of short ribs on the WSM this morning and let them rock at 275* for right at 7 hours. These were so great, and my fiancé (who is not a huge BBQ fan) went back to try and tackle a second one of these bad boys so they must've been pretty good.

Nice work there - loves me some shorties! That might be my favorite cut of beef.

I grew up in K-town (well, spent the years I was supposed to be "growing up" there anyway...) - beautiful place! Still go back at least once a year & love it.
