View Full Version : Doing my BBQ wrong

I was reading a Pinterest article on 1st time smoking PB. Now I’m not new and don’t plan on changing how I cook mine, but a few differences between me and the article are:
Cook fat side down, I do it up.
Don’t inject, I do.
Don’t put a heavy coat of rub on, I lay it on super thick.
Wrap at 160, I wait till 170.
Cook to 185 and rest to get to 190, I just go to 201 and check.

Lots of conflicting advice out there. If what you do works for you, it's all good.

I:

Cook @ 300
EVOO
Salt
Regular rub (has no salt)
Wrap 6 hours in
Finish when probe tender, everywhere.
Hold for at least an hour in the Catergator

Many ways to skin a cut. This takes 7 hours generally.

I'm sure we all have our variations. Mine:
- fat side up (but my heat is not coming from the bottom, like a UDS or PBC)
- don't inject
- pretty heavy rub
- cook at 225-250
- never wrap
- cook to 201-203F

Pinterest is loaded with fails and bad ideas. I can't count how many recipes the lady, or her family, have pulled from there...and then they were disappointed with. Not much vetting seems to happen on that site. I've had much better luck reading 4-5 threads on a topic/protein on here, and then applying that to my cooking style.

I've heard it told that "There is no One Way to do bbq right. There are some ways that are more accepted and endorsed."

I think, if you did it- however you did it- and you like the results- you did it "right".

Funny. I just cook direct until medium rare, then slice an inch thick and use for sandwiches. At least that's how I used to do it before all of my teeth were yanked out of my mouth during a particularly difficult sandwich eating moment. Now I just microwave bologna.

Lets see.....
- I cook fat side up in my BGE and Yoder (I tried fat side down and no discernible difference for me)
- I don't inject
- I use a heavy coat of rub
- I don't wrap except in a towel while it rests
- I cook to 195 - 203.

BBQ is all about finding what works for you and run with it. Try different things. Just don't change too many things at one time or you will never know what you like or don't like.

I don't see anything wrong with the your method.

Like everyone said, take advice from the Pinterest with a grain of salt.

Only thing I see is you may try fat side down. But again it's just preference

Your only mistake was referencing a Pinterest article for legit barbecue advice.

I took lots of advice when I was learning and ended up with my way to do it through trial and error. Several brothers have already posted their methods and I wouldn't presume mine is any better so I won't bore you. Pay attention to all the advice you get and eventually you'll find what works and what doesn't. If you're happy with the results you're getting now, what Pintrest thinks doesn't really matter.
