Came across a pack and they looked good so I grabbed them

Decent marbling for such a lean cut

Brined one with Naturiffic's Harvest Dry Brine

About an hour later

Hit it very slightly with Bad Byron's

The rest with were hit with assortment of rubs for different flavor profiles

A few mins on each side and done. Plated are Un-brined Q-Salt and Harvest Brined with a dash of Bad Byron's

Both really good. The Harvest brined had more flavor depth but the Q Salt wasn't too far behind. I really liked the Southern Flavor charcoal as well. Of course Oakridge was great too but I think it shines on ribs.

I am curious. With all the brine you put on those, plus the rubs, were they too salty? Maybe they were perfect? I was just concerned about the saltiness after you did both.
