I would cover it with pierced aluminum foil so the rice will steam. If you want smoked flavored rice I would leave it uncovered for a only a short duration. I mean people smoke Mac and cheese which is a starch so it would work. I just don’t know if I’d like the taste but that depends on what kind of recipe your doing.

I would imagine it would be good in a cheesy casserole dish like a cheesy chicken and rice casserole. Also perhaps a dish with bold flavors that can mask some of that smoke flavor like a lightly smoked jambalaya or something.

I love smoked rice. I add minced onions or scallions and chicken stock.. let it smoke uncovered til the stock is absorbed. Then cover and let it keep warm while the rest of the meal cooks.

I have only smoked cooked rice.It was Tastee though.

Paella cooked on a smoker is awesome. Nakedwhiz is a good starting place if you want to go that route:

Rice looks great Jeanie, do you adjust the amount of water or just smoke until the normal amount of water is absorbed? Have you done brown rice?

Paella and risotto have been done on my pits many times and I have seen many variations on this site of the same.

Thank you Bill! I start with the regular amount but keep some chicken stock on hand in case I need to add more. Most times I don't.
I've smoked a wild rice blend that contains brown. It works fine. I just keep an eye on the moisture and texture of the rice and pull it off the heat when it's tender.

Rice really takes on smoke well. imo

The traditional kamado's were rice cookers before USAF guys started cooking meat in them after the war.

Thanks Jeanie, that paella looks amazing. I will definitely be smoking rice during my next cook.
