Always seem to have extra ribs leftover.
Looking for recipes,tired of eating bones.

Soak any form of beans, and cook them with the left overs.
Makes an awesome stew or soup.
Even lentils would work....

Since tacos have already been taken, enchiladas or tamales.
That meat pie suggestion sounds darn good.

I made Brunswick/ BBQ stew with the last ones I had leftover. I bet the fried rice would be dang good too...or enchiladas....or anything already mentioned.

Cut them into individual bones, egg wash, dredge in flour and rib rub, and fry them.

I've added rib meat to pulled pork. Made the entire pile taste like ribs.

Yep, I ended up with about a half a rack leftover last time I did ribs. Nuked them just long enough to warm the fat and then pulled the meat off the bones. Vacuum sealed that up, it was about a pound of rib meat, and tossed it in the fridge. Next time I made chili, I used a pound of ground chuck, a pound of chili grind, that pound of rib meat, and a pound of chopped brisket. Some of the meatiest and best tasting chili I have made.

My favorite way to eat any left over bbq meat (pork, ribs, beef, chicken, sausage, pastrami,) is to shred/chop some, then throw it on top of a baked potato, russet or sweet, with butter, sour cream, shredded cheese, green onion and drizzled with some bbq sauce and hot sauce. Horseradish is also good! I also made a "sort of" version of Alabama White sauce and used it left over on top. It was good too. Since I am going potato themed, you could do smoked potato skins also.

Quesadillas.
Shredded meat, shredded 4 cheese mix, diced onion and japs, salt pepper favorite sauce. Spray skillet, drop in, spray other surface and flip when browned. Cut into 1/4's and spread sour cream, eat.
