Used some of the smoked chicken from this cook...

Mixed the smoked chicken with scallions, cheese, cilantro and seasonings...

Beautiful work Jeanie, I am usually too lazy to batter and fry. Your plated pics are truly worthy of a page or two in your upcoming cook book...:wink: I take the easy way and smoke them once stuffed until the Poblanos are tender and the cheese is melted and browned.

I saute garlic and onion in a bit of oil til tender. Add 2 cups of chicken stock, 8 oz of tomato sauce, Mexican oregano, salt and pepper to taste. It's simple but adds so much to the rellenos. Good luck with it! :-D
