Looking into making a smoking my own boudin when i get my smoker. Was wondering if anyone here does that. Any good recipes or tips would be a big help.

Best tip I can give you is never use frozen liver. I usually make with wild pigs, but when I don't have one I use chicken liver because I can't get fresh pork liver in my area.

I doubt I could get fresh pork liver here, never looked for it. Does the chicken livers change the taste much?

I hate boudin, so will not make it.
Having said that, there are a lot of recipes in Jeff Weiss book "Charcuteria, the soul of Spain".
It's a beautiful book!!!

This guy does a pretty good boudin tutorial. I prefer pork liver when I can get it, but chicken livers will do. You can also use liverwurst or Braunschweiger.
