They look great! You nailed that.
I made a mistake the other day.
I was seduced by a good deal and cooked loinbacks this weekend. Marinated them, based on past experience, and had to keep an eye on them so they didn't dry out. My wife asked what I did different, because they weren't as good as usual. The rest I purchased might go into the crock pot.
Whole spares, all I do is remove the membrane, rub, and cook for 4 hours before checking. Less time and fuss, better flavor.

I had to do a double take when I saw that this wasn't a wing cook from the king, but I wasn't disappointed at all. Very nice job, and my, do they look tasty!
