FYI, if you're a Sam's member that same bottle cost me about $8 there last weekend. It's good pepper.

Step one, buy it from a dealer because it's likely it's been ground in the last few weeks, and you will be able to tell the difference. But only buy enough for 4 months, then re-order. Packaged pepper in the store can be years old. There are plenty of reputable spice dealers, HERE (http://www.penderys.com/page55.html) is one example.

Step two, decide the size of grind you like. I prefer the 1/4 cracked for roasts, bacon, peppered salmon in sausage or rubs for heavy meats. But I buy table grind for regular usage. Some will sell 1/2 grind, but that's pretty big. Here is 1/4 grind examples.
