Been experimenting a lot more with hot and fast. 300 degrees plus. I did not wrap the brisket until it came off the pit to rest. I pulled it at 205. Cooked on a stick-burner using 100% pecan for fuel.

Chicken looks really good! What temp were you running at? OOPs--just saw you ran over 300

I shot them up with creole butter and Tajin for my rub. It is now my go to dry rub for birds. Love that stuff.

Chicken looks awesome. I don’t think I would ever eat brisket if I had to pay $7+ per pound.

Do you have to rotate the chickens at all? Looks good! I do not move or rotate them at all. If I'm running charcoal I get good consistent even heat everywhere, but with an open fire you are at the mercy of the pit-master tendering the fire. For instance, you could have a log fall to the left side of the firebox and it will develop a hot spot there.

Nice job! Chicken looks really good! Brisket looks good too. Did your flat come out fairly juicy at a higher temp?
