Decided to fuse together some Korean beef in a calzone.
Picked up a hunk of Pichana, trimmed and sliced into an over night bath in a “Bulgogi” marinade.

Onto to the 18” for a short cook

The beef is off to cool a little bit before building the calzone

Onto the smoker to catch a little smoke in the crust, will finish in the oven since I don’t have a stone

If you have access to any sort of oriental market, I've got a suggestion for future cooks - PM only if you're interested... it's the same basic flavor profile I use for my Korean wings - I won't harass you here/now.

I love what you put together, brother. That looks delicious.

Looks like I could scarf one or two of those. Only thing missing might be some veggies marinated and grilled the same way. Maybe some onions and mushrooms?

You don't generally see cheese (or any dairy) with East Asian Foods. How'd the Provolone and Mozz pair with the bulgogi flavors? I don't have any reference points for cheeses paired with Korean, Japanese or Chinese food

Cheese is now commonly used in many of the modern Korean foods. Young Koreans love cheese and you'll see people dipping spicy pork ribs in gooey cheese dip and many spicy stews have optional cheese added. You wouldn't think cheese works with Korean food but it actually works very well in many popular dishes. Really interesting, thanks. I love spicy rice cake but have never seen it offered with cheese. That looks great.
