My Sam's has closed and I can't get bone-in pork shoulder. I joined Costco but they have only boneless pork shoulder. Is that an ok substitute? Cooks the same? Thanks.

I prefer bone in but would use boneless if that is all I can get Continue to check Costco they may get it or ask them if they ever have it

Hey there. I’m in Chicago burbs. If you can, do the KCBS membership and then go to Restaurant Depot. There is one in Des Plaines near Allstate Arena, and then another one in Lomabard. Been getting fantastic bone-in butts from them at fairly cheaper prices than Sam’s or Costco.

I've used both and didn't notice a difference in quality. Boneless should be just fine.

Try a Picnic ham, dang near he same taste as shoulder :thumb:and usually cheaper.

I'm assuming you guys are talking about butts & not shoulders?

Cooked them all. And never found a better bang for my buck than a boneless boston butt.

A boneless butt will cook in a similar fashion as the bone in butt.

I also prefer bone-in butts, however I like the boneless butts for making buckboard bacon, shoulder ham, and even pulled ham sandwiches.

The one boneless butt I've cooked was noticeably drier than bone-in.

Don't forget 'regular' grocery stores...I can find bone-in and boneless butts at every local Kroger, Publix, etc.

I like bone in purely for the fact I can tell when its done REALLY easily lol. Im lazy. Other than that I dont notice a true difference in taste

Talk to the meat department at the grocery stores. They typically get bone-in butts from their distributor, then they cut them into pork steaks, country ribs... and some stores even grind them for their own sausage. You might be able to just buy bone-in them from them.
