Are you gonna try and cook at 275? I'm interested to hear how well the Weber briquettes do at that temp

I'm in the same boat. Butt on at 0700. Running at 275 for now. Hope it will be ready for pulled pork pizza tonight for the Super Bowl party.

Butt got in by 5:30. The WSM is purring along at 275 with some help from my Digi-Q. Will decide at stall time of I need the crutch or not.

My Weber bricks seem to gravitate toward that temperature +-10 no matter how much I use.

I'm with you, woke up at 3 this morning to throw on 2 pork butts. That killer hogs rub gives the meat a great color, good luck with the cook.

You guys are crazy. I would get up at 9am, run the temp at 325-350 and have the butt done in 6 hours. Love the bark at that temp. I also foil to speed it up. Good luck on your cook.

Thought I'd try hot and fast. 8.5# butt on the UDS @ 8:00 running 325*.
I'll see how it turns out.

haha.. well I'll be the first to tell ya.. I'm lazy.. Only one time I've woke up at 4-5 a.m. to cook and that was on a time scheduled cook out.. If you look at all of my cooks on the forum.. you'll notice it always start about 9-10 a.m. Biggest cuts are always for late night snacking and through the week.. For eating that day I always have chicken, ribs, or smaller kinda meats.
