I bought a cryovac'ed bag at the base commissary labeled "pork baby back rib strips" and thought they might be an interesting cook.

I rubbed them with Oakridge Competition and put them on the Assassin at 250 for just under 3 hours with some apple wood chunks.

A nice, quick cook. They're not much to look at, but they sure taste good. :-D

No bones, just strips of meat. I've never seen these before, but after this cook, I hope I find them again.

Quick cook, and they're tender and delicious. :-D

The loin-cut country style ribs they sell around me are boneless. That's the big tip off. The ones cut from the shoulder are cut through the bone.

Goof info, dads. I've never cooked country style ribs before....might check them out now. :-D

I don't bother with the loin cuts because they take so much fussing with, loin cut pork chops are more predictable.
