View Full Version : Weber kettle 26 smoking setup

Wife suprised me with a 26 kettle today. While browsing youtube videos of the kettle I saw one guy use a 18 inch grate so it sits lower in the bowl. That got me thinking about a kamado style smoking set up with a charcoal basket and deflector plate above the basket. I have close to 3 1/2 inch's to play with a deflector and a baking sheet to catch drippings.

A snake would prolly be better for smoking.

I'd just put a SnS in there, I think they make one for the 26". I like convection.

Step it up and get some fire brick in there. Fake kamado! Itll help keep steady temps!

Interesting idea. The charcoal grate for a 22 is 17 inches. You could try that if you don't want to sacrifice the cooking grate for the 18. As for a deflector plate are you thinking ceramic of just a pizza pan? Let us know how it works out.

I have used my charcoal grate from my 22" kettle in the 26" kettle to create more space. Your wife is awesome, i still have the letter my wife wrote me when gifting my 26" to me.

Good idea. I use mine primarily for grilling, but I might try that out.

I'm going to try it out either today or tomorrow. I still have the bottom I cut out of a 55 gallon drum that I'm going to test it with. If its a success I may get a defelector from a kamado. I doubt it will be good at low n slow (225) but if I can get it to settle at 250 to 275 I'd be happy.

I can get my 22 to settle in at 225 pretty easy. Check thrift store for pizza stones if you dont want to fork over the cash for a legit deflector. Ive found multiple for $1

Buy a Slow 'n Sear and a Vortex for your 26" and that will keep you busy for a long time! I love mine.

I have plans to get the slow n sear but this is free lol just need to get some long bolts to hold the deflector.

I'd worry about there being a hot spot under the food, because the coals are so close. If you already have the stuff, it's worth a try. I've seen several versions where someone has placed a deflector above the coals using the snake method. Pictures are gone, but Landarc used a CI griddle this way.

Yep it's a 50 50 shot if it will work or not. The meat being so close concerns me also but it seems to work okay in kamados. Proven methods out there already it's just something I want to try.

Pretty simple. Hopefully it works.
I've never thought of fire brick...the 26" should have enough room to stand some up around the perimeter...I wonder if they would get in the way of the top grate? Then a snake for sure.
That is...if your idea doesn't work.

With the snake method is there a concern that the lit portion of the coals can burn something like ribs since they're so long?

Na. The lit portion is only so long. You can just rotate rhe grate once or twice if needed. The size of the 26 you probably wont have to

For ribs, I just bank the coals on one side and cook the ribs on the other side. Face the thickest portion of the meat towards the coals.

I have a 26 and set it up snake method with firebricks, works great, temps hold steady, longer cooks like brisket require adding more charcoal about six hours in.

With the same charcoal basket I got close to 14 hours in my Weber kettle mountain. Getting the paint off the defelector was harder than I thought but she's ready to go for tomorrow. Beef/ baby back ribs and maybe a small chicken.

Meat has been on about 30 mins now and settled in at 252. I put a tray in just in case I would need water but so far no need.

It works great. I use a 24" Pizza pan wrapped in foil. More room on the 26" then on the WCSG. My first test was a 13# Brisket. Meat was done at 9 hours (@275) and then I just let it burn out. Lasted 14 Hrs using the Weber Charcoal.

Turned out great. Cook time was about 5:40 at 265. Beef ribs didn't last long enough to get a picture lol

I like where your head is at. I tried to do a kamado-esque set up in my smokey joe. Worked pretty well minus poor vertical clearance.

It works out so well because of how deep the bowl is on the 26. That paired with the 18 inch charcoal grate it makes a good smoke chamber.

Smoke ez is a nice addition. It could be something I add in the future or get my own sheet metal rolled.
