Pulled pork taco with some calabacitas on the side. Simple but really hit the spot.

I sometimes cook a pork butt when I already have something else planned for dinner.....love me some pork. Yours looks great!

Those look fantastic! Out of curiosity, is that regular smoked pulled pork, or do you use different seasonings if you know you are going to use them for tacos? Seems like you would change the flavor profile a bit, maybe season fajita style.

Pork butt was seasoned with just salt and pepper. Once it was pulled I added a small amount of Carolina vinegar sauce which to me really brings out the natural sweetness of the pork. By keeping the flavor neutral I'm able to use the leftovers in all types of recipes. The fresh salsa we added worked really well with the pork.

I swear that often the leftovers taste smokier and more flavorful than the original. I'm not sure if its just in my head but my wife often agrees. Makes me wonder how the flavors change chemically/structurally in the refrigerator.
