Meal Prep for the Week

After 9 years out of the workforce raising our 2 kids, my wife is back to work. Since she is now working some evening hours I figured why not bbq a bunch of meat for the week?

I used the WSM which has been getting neglected. Pork butt, a couple naked fatties, and also cooked the money muscle seperate.

Also did some boneless skinless chicken thighs which I smoked at 250, then seared for a few minutes.
These were incredibly juicy. No brine, just seasoned and smoked.

The kids can't get enough of the fatties. I seasoned one with Killer Hogs, the other with SM genies trinity.

I also made some roasted garlic mashed cauliflower and vinegar coleslaw. Trying to get away from all the heavy carbs. I think the family will be well fed the rest of the week.

Nice work! The wife and I both have demanding gigs so I often cook massive amounts of meat on the weekends for the week. Great way to go! Our youngest, who's a tiny 6th grade girl usually request pulled pork. She heats it up before school and takes to school in the thermos for lunch. She's been doing it since the 4th grade. Cracks me up.

Nice cook for sure and helping with dinner certainly helps make the family and the wife happy. The downside is you got to smoke some meat........winning!
