After 9 years out of the workforce raising our 2 kids, my wife is back to work. Since she is now working some evening hours I figured why not bbq a bunch of meat for the week?
I used the WSM which has been getting neglected. Pork butt, a couple naked fatties, and also cooked the money muscle seperate.

Also did some boneless skinless chicken thighs which I smoked at 250, then seared for a few minutes.
These were incredibly juicy. No brine, just seasoned and smoked.

The kids can't get enough of the fatties. I seasoned one with Killer Hogs, the other with SM genies trinity.

I also made some roasted garlic mashed cauliflower and vinegar coleslaw. Trying to get away from all the heavy carbs. I think the family will be well fed the rest of the week.
