Good day all!

I'm reaching out to the Brethren for suggestions on low carb sides.

NOTE: I am not diabetic, just a fat farker attempting to become just a farker. :-D

Q is a terrific way to get on and maintain a low carb plan, but I'm having a challenge figuring out side dishes that are tasty and low carb enough to help me stick to that plan.

Thanks in advance!

Bruce

I’m down 46+# in 14 months eating foods mostly from this list. And I eat a lot. It works for me and the Bride. Added a tad assuming alcohol consumption. Alcohol is cool- dark beer and red wine. Unfortunately brown water gifts and purchases have been tempting me.

6-2 269# 11-01-2016, 223# this morning

5-4 149# 11-01-2016 131# this morning

I’m not perfect at it. Bride is less perfect. She likes waffles and chocolate.
Still works for us eating primarily low glycemic index foods.

Peruse this list.

Roasted corn on the cob off the cob with cotija cheese (or parmesan) with some butter lime and chili

Coin cut zucchini and squash tossed in canola oil and Montreal Steak Seasoning and baked on a greased sheet at 400F for 30 minutes or so. Keep the coin cut veggies 1/4 to 1/2" thick.

Whole head of cauliflower covered in plain yogurt then apply curry powder, salt, pepper, garlic and paprika and bake on a greased sheet pan for 30 minutes. Cut it into 1" thick slices vertically. Reseason to taste.

Corn tomato salad with fresh herbs, extra virgin olive oil and lime juice.

These are some of our favorites. Check out 16Adams's post lots of really great looking food.

LOL he posted just before me!

I love smoked green beans, and smoked cauliflower. Most people do their cauliflower whole, I just chop mine up and put in in an aluminum pan. Toss with S&P and olive oil. I also like to roast it in the oven. Learn to cook it right, and it makes a pretty good substitute for potatoes. You can also steam it, and add it to mashed potatoes, to lower the carbs.

The butter fried cabbage & the creamed cabbage are great. Probably even better if you lay some smoke on the cabbage first.

Thank you for the list!

I'm curious...most of the suggestions have been for veggies. Do folks have other suggestions that are in addition to veg?

I've done low carb previously with very good weight loss results. In the past, one of the issues that I've had in being able to stick to a low carb diet is the impact of increasing the veg content on my GI tract. When the veggie quotient increases, the, ummm, speed at which things traverse my gastrointestinal tract increases. :mmph:

Corn and cauliflower are a particular is a problem for me. Love the taste of both, unfortunately, my GI tract can't tolerate anything more than a bite or two before objecting.

Thanks!

I've been into Brussels sprouts with lots of thick cut bacon lately. I eat a lot of grilled asparagus. I also buy frozen bags of vegetables from Costco. They're cheap, "organic" if you care about that sort of thing (I dont), and taste nearly as good as fresh. Lots of green beans, corn (has some carbs/sugar), and their stir fry mix.

@ rookiedad: That's what I've been reading about most recently. Am really restricting carbs now to try to get to ketosis and hopefully achieve some results relatively quickly.

@JoshW: thanks! Never heard of Aduki beans...will look them up.

@susandswine: Yup, enjoy roasted Brussels's sprouts. Am getting ready to go to the store shortly...will be picking some up! Thanks!

Today is going to be venison brisket chophouse burgers (no bun) topped with onion portobello and Swiss with roasted cauliflower and broccoli. Then nothing after 2pm.

Nice thing about the Dr Fitt list- you don’t count carbs, protein calories etc. you just eat from an extensive list of low glycemic non processed foods. Simple.

But there’s lots of ways to get where you want to be. You can mix and match programs. I’ve got a friend that doesn’t read labels. He doesn’t because he won’t buy or eat anything with an ingredient label.

He’s got the barest fridge I’ve ever seen. He eats everything fresh, unless he dines out.

Cleaning out (eating) the pantry/fridge/freezer in preparation...

Low carb is no sugar, grains, starches, etc. (pasta, rice, taters, bread, cornbread, good beer).

Be careful with veggies, corn, peas and most beans are a no-no. In moderation, carrots, green beans, onions are ok. Someone mentioned quinoa, that's also a no-no.

No, no and no. All very high in carbs.

He was asking for non vegetable side dishes, although they are high in carbs, they are low glycemic carbs. Best I could think of.

Grilled or sautéed (olive oil) mixed veggies works for me. You can do a different combo at each meal to keep it interesting.

Remember diets don”t work, you must make a life style change to make it lasting.

Good luck!

Thanks all for the suggestions.

Here's what I've been working on...doing some batch cooking for the week:

Last night, grilled up some rib eyes:

Today: wings dusted with Ploughboys Yardbird and then topped with some crunchy garlic:
BTW: Whoever posted about crunchy garlic recently, THANK YOU! That stuff is amazing! NOTE: This pic is the second plate from lunch.

Unfortunately, the two stores I went to this morning didn't have a lot of turnips...this is what there was...roasted with S, P and olive oil.

Stuffing mix for stuffed mushrooms: sausage, spinach, mushroom stems, seasoned with garlic, onion, Complete Seasoning from Badia:

Will use leftover stuffing mix in the mornings this week and combine with eggs for breakfast.

I'm pretty full. :becky:

We follow several Low Carb Facebook sites and really enjoy most of the dishes on them. I am down 34 lbs in 2 years and the wife is down nearly 40. We do cheat some but stick to in 98 percent of the time.

try www.ketoconnect.net they have alot of recipes on there. if you are going to go kete you should check out their whole site and youtube channel. remember, when it comes to keto your goal is keto adaptation. this is when your body becomes efficient at burning lipids for fuel. in order to do this you really need to starve your body of carbs. just eating low carb will still be enough carbs to keep you out of ketosis.

@rookiedad: Thanks for the link! Looks like some really good options there...bookmarked!

And, yes, I'm good with the keto concept. Have considered (but haven't yet pulled the trigger) on getting a glucose/ketone meter to actually measure blood to know exactly what my body is doing in response to the fuel it's being fed.

BTW: So far, so good. I've been keeping carbs very low since Tue (meaning, just protein, veg and fat). Only issue so far has been occasional headaches.

I started doing Intermittent Fasting and Low Carb the day after my birthday (turned 48 ) in the end of August. My goal is to lose 100lbs by the time I hit 50. The last month or so I’ve been reading and researching Keto more and have started doing this. I’m currently down 45lbs, so I think things are going well. I just ordered a Keto-Mojo (http://www.keto-mojo.com) to measure my glucose and ketones. The Keto-Mojo is a newer monitor and their ketone strips are much cheaper than the ones for the Precision Xtra.

When I first started just doing low carb I would usually just nuke a bag of the steamable vegetables like string beans or broccoli, but now that I’m doing keto and only eating about 20g carbs a day I’m doing a green smoothie (kale, parsley, avocado, etc. - no fruit) to get my vegetables in and then keep my protein at 100g or less and then eat fat to satiety. Now my sides are usually things like macadamia nuts, guacamole, bacon and keto coffee. :biggrin1:

The low carb flu... It goes away. I did the Protein Power diet about 7-8 years ago, lost about 40lbs. but ended up adding them back on plus more. Going to try keto this time, looks like it's more of a lifestyle change. I signed up for a free month trial at http://www.dietdoctor.com Looks like a pretty good site. Lot of info, recipes & videos.

You can also try the Keto urine strips, not as precise as the meter, but a lot cheaper.

Deviled eggs

Portabella mushrooms brushed with olive oil, then grilled. Any mushroom really.

2 of my favorites.

You can stuff an awful lot of low carb goodness into mushroom caps also.

also remember that carbohydrates work on the same pleasure centers that cocaine does. that is why they call it comfort food. it makes you feel good. we have all been addicted to carbohydrates since birth. after a year or so of adaptation the addiction will be mostly gone. you will feel totally different. at that point though you might think about carb cycling. it will prevent your bodies leptin levels from declining. i have not cycled for two years but will start one carb cycle day per month for the next year as kind of an experiment. some people do not need to do this at all. check this guy out www.primaledgehealth.com on his site and on youtube.
