We have used 2 cans of jumbo lump crab meat to make to make crab cakes Is there any reason why I cant mix all the ingredients together including raw egg and Vac Seal to be cooked Sat Thanks

As a nurse, you probably know more about the treatment for food poisoning than most of us. Even in a vac sealed bag, bacteria's life cycle goes on at the same rate. It's the temperature that matters. Maybe a partial cook now to sterilize, and finish them on Sat?

No, I would line a sheet pan with parchment, or a silmat, form the cakes, put them on the pan, and freeze. Just be further ahead.

edit: I just thought, if you are putting mayonaise in your cakes, I would not freeze. eggs freeze fine, but mayonaise does not.

I just got a sealed can of crabmeat and it said to use it in 2 days.
Wouldn't do it.

We have pre made crab cakes before and frozen them raw with egg and mayo in the mix and they were good. I guess we will just freeze the mix and make the crab cakes when we get to Boston. Thanks

It's not that you can't do it, and I don't see any safety issues. But mayonaise tends to break, when you freeze and thaw. You might get by with it, and you might not. Would hate to see you ruin good lump crab.

We've pre-made crab cakes and fish cakes for years, then just pan saute and they come out great.

Other options that freeze well are crab enchiladas and crab stuffed mushrooms.

I hope frying them first doesn't dry them out. What would you do for reheating them?

slow in a pan with butter and a small lid over the crabcakes.

I'm a Marylander and have words about crab but not here...

Kay has decided to bake them first. Then freeze them. Will reheat in the frypan with butter as stated above
