So while I was at Wally World yesterday what do I find??? Beef Cheeks!!! :clap: :faint2:

Now they're not as nice as some of the beef cheeks I've seen posted by some of the brethren that have been smoked and sliced to perfection. I have no idea where you people find those fabulous looking things. No matter. I FOUND BEEF CHEEKS!

Trimmed off the silverskin I could get at, I don't bother with the fat, it just melts into this sticky sweet deliciousness.

Gave it a good coat of 407BBQ rub & Fajita Seasoning and into the fridge for a few hours.

On to the Big Joe at 325 for a few hours for some smoke.

Since I got a late start, decided to throw them into the Instant Pot. Actually turned out just as good as the previous times I've done them braised in the smoker. Except 4 hours less time.

Mmmmm. Love tacos de cachete. They have that sticky, beefy flavor to em. Those looks mighty fine. Pretty much the same as I can get at Walmart. I have found that the SAMs stuff is as good, just better quantity for the price.

I'd hit that!

Is barbacoa normally made from beef cheeks? Iíve only had them at Chipotle, Taco Cabana, and a few hole in the wall places down here. Never thought to ask what type of cut am I eating.

Real barbacoa is beef cheeks, actually I think real barbacoa is a cow's head, but I ain't going there. From what I've heard Chipotle and them use chuck which in my opinion, tastes nothing like cheeks. Cheeks have this sticky sweet flavor to them from the fat rendering down.

that looks good! In our ranch we cook a cows head in a large pot, in a covered hole on the ground over night. My favorite part are the cheeks. Delicious for breakfast!

Looks amazing, I think the IP method may even improve on the deep subtle smoke due to the pressure. Unfortunately for me I have never seen beef cheeks at my Walmart.
