Picked up from Matt's pits yesterday and seasoned it with olive oil so today was time to fire it up and cook something :)
I set the deflector plates up under the right side leaving the other side open to the flames for a final sear. Loaded her with lump and a few baseball size oak chunks and waited for it to hit 325. Rubbed with olive oil and seasoned 4 leg quarters with Sucklebusters 1836. Once they hit 165 IT I moved them over the coals to brown them up and crisp up the skin. They turned out great.

I used it on the turkeys I cooked for our church and everybody loved it. Have used it on chicken a few times and I and the wife like it.

Remember - don't trust that therm...
I had one read perfect, then go bad by 50, then 75 degrees...
