Can anyone go to a supermarket and NOT at least check out the meat section? Found this beauty while I was scanning for deals....they had them laying on the roasts. If you don't see any, go visit the nice ladies at the customer care desk...they had a stack of them. Shoprite rules!!:mrgreen:

1ST cut- Center cut
While testing our Best Prime Rib recipe, we discovered that choosing the right roast was almost as important as deciding how to cook it. Butchers tend to cut a whole rib roast (which contains seven ribs) into two 3-rib roasts, known most commonly as first-cut and second-cut roasts. Our recipe calls for a 3-bone first-cut roast, which sits closer to the loin end of the cow and consists of ribs 10 through 12. First-cut roasts feature more of the flavorful, tender rib-eye muscle than do second-cut roasts (ribs 6 through 8 or 9), which are comprised of a mix of smaller muscles and more pockets of fat.

Wouldn't it be considered a choice rib roast instead of a prime rib roast?...

The word "Prime" by itself only describes the most desirable part of the "rib section" of the beef regardless of the USDA (US Department of Agriculture) Grade.

I call it the "short end". You are correct on it being the tenderest part.

GENTLEMEN - can we clarify. I see some roast with curvy short ribs, then others with longer ribs. I am assuming the curvy short ones are the front,
and the longer ones the rear, or loin area??
I have butchered alot of deer and am embarrassed to ask....

Yeah thatís just the standard $1 off per pound that the coupon gives you. But then the conversation went on to daninnewjersey pointing out his shoprite has USDA Choice for $3.99. Usually CAB is a buck more a pound and I was hoping to get another cryopack of CAB since it really just gives you a bit more of guarantee that youíre getting the top choice into prime range of meat.

I have to quibble with this part, and it's a matter of personal preference. I prefer the chuck end (2nd cut) as it has a larger percentage of the ribeye cap (spinalis dorsi), which is one of the most tender and flavorful parts of the cow.

Yes, that is correct. Shorter bones are from the chuck end up front, longer bones are from the loin end.
