Mid week dinner while the wife works her day shift. I figured if Iím watching my girls while stepping out every 45 minutes to spritz the spare, I can definitely throw a log on the Bandera and spritz as well. I like my ribs dry so I only sauced her half.

This was more of a test run of throwing sticks while watching my kids. Besides tending to the meats and fire under a floodlight, everything went well for 5 hours. I stepped to the side of the house every 30 minutes to check on the fire. May be less if I used a remote temp next time. I have too many grates that got in the way during the spritz but that’s an easy problem to fix. Next showdown: brisket.
